Apple Bran and Raisin Muffins

Quantities

Plain Flour 2 1/2 cups sifted
Bicarbonate of Soda 1 1/2 tsp
Cinnamon Ground 1 tsp
Apple 1 whole
Bran 3/4 cup
Raisins 1 cup
Milk 1 3/4 cups
Egg 1 whole
Honey 1/4 cup
Vegetable Oil 1/4 cup
  • Preheat oven to 200 degrees celsius.
  • Sift plain flour, bicarbonate of soda and Cinnamon Ground together into a bowl.
  • Stir in peeled, cored and chopped apple, processed bran and chopped raisins.
  • Whisk together milk, egg, honey and vegetable oil.
  • Make a well in the centre of the flour mixture then lightly fold in milk mixture.
  • DO NOT OVERMIX, no more than 16 strokes is usually required.
  • Spoon mixture into greased muffin tins until 3/4 full.
  • Bake for 20-30 minutes or until cooked and golden.
  • Cool on a wire rack.
  • Store in an airtight container.
  • Serve warm or cold, spread with butter or margarine.
