Apple Bran and Raisin Muffins

Preheat oven to 200 degrees celsius.
Sift plain flour, bicarbonate of soda and Cinnamon Ground together into a bowl.
Stir in peeled, cored and chopped apple, processed bran and chopped raisins.
Whisk together milk, egg, honey and vegetable oil.
Make a well in the centre of the flour mixture then lightly fold in milk mixture.
DO NOT OVERMIX, no more than 16 strokes is usually required.
Spoon mixture into greased muffin tins until 3/4 full.
Bake for 20-30 minutes or until cooked and golden.
Cool on a wire rack.
Store in an airtight container.
Serve warm or cold, spread with butter or margarine.
