Cream butter in large bowl until fluffy. Beat in Honey in a fine stream until blended. Add eggs one at a time. Beat well after each addition. Combine carrots, nuts, raisins and
orange juice in small bowl. Set aside. Combine flour, baking powder, cinnamon, baking soda, salt, ginger and nutmeg. Add dry mixture to creamed mixture alternately with carrot mixture:
beginning and ending with dry mixture. Turn into greased 9" x 13" cake pan. Bake 350 degrees for 35-45 minutes or until toothpick in center comes out clean. Cool in pan on wire
rack. serve in squares with Orange Cream Cheese Sauce (recipe following):
1 250g cream cheese, softened
1/4 cup honey
1 tbsp. frozen orange juice concentrate, thawed
1-2 tbsp. milk
Combine all ingredients using enough milk to make a soft spoonable consistency. |
