3 Steam Puddings with Honey

Quantities

Self Raising Flour 1 1/2 cups  
Butter 1 rounded tablespoon
Eggs 2 small
Milk 1 cup
Honey 3 level tablespoons
Honey Butter Sauce
Honey 1 tablespoon
Corn Flour 1/2 tablespoon
Butter 1 tablespoon
Milk 1 cup
Vanilla Essence 1/2 teaspoon

Beat the butter and honey to a cream. Add eggs; beat well. Add milk, then flour. Place in greased pudding bowl. Place bowl on a rack, in a pan of water 2/3 the height of bowl. Cover and steam gently for 1 1/2 hours

1. Devon Pudding: Add 3 tablespoons of sultanas and 1 tablespoon of chopped almonds.

2. Date Pudding: Add 3 tablespoons of chopped dates and 1 tablespoon of chopped walnuts.

3. Chocolate Pudding: Add 1 tablespoon of cocoa and 1/2 teaspoon of vanilla.

Honey Butter Sauce:

Cream honey, cornflour and butter. Bring milk to boil and stir gradually into creamed ingredients Return to saucepan and cook until it thickens.

Alternatively prepare a Honey Custard according to the custard powder packet, omit the sugar, then add honey to sweeten while the custard is still hot, stirring until blended. Use a rounded tablespoon of honey to replace 2 tablespoons of sugar.

Suggestion: Use a mild tasting honey for the above recipes.
