Quantities

Flour, self raising 8 ounces
Baking powder 1/2 tsp. level
Salt good shake
Butter 2 ounces
Egg 1
Milk 1/4 pint
Honey 2 tablespoons
Orange Rind, grated
Milk for glazing
Butter, a little more for brushing
A little ground cinnamon

Beat together the egg, milk honey and orange rind.

Sift together the flour, salt and baking powder.

Rub in the butter.

Mix to a soft dough with the beaten egg, milk, honey and orange rind.

Turn on to a lightly floured board and knead quickly.

Roll to a thickness of 1/2 to 3/4 inch and cut out rounds with cutters.

Place onto a hot baking tray and brush with milk.

Bake at 450 degrees to 475 degrees, gas mark 7 to 8 for 15 minutes.

Brush with butter while still hot and sprinkle with cinnamon.
